Chilean Crab Dip (Dip de Jaiba)

This cheesy crab dip is a favorite for any get-together. While it is inspired by the classic Maryland style, it is a staple for us in Chile when we want something special but easy. It is incredibly creamy and the melted cheese gives it that perfect stretchy texture everyone loves.

You can use fresh or frozen jaiba (crab) meat for this recipe. If you use frozen, just make sure to thaw it completely and drain all the excess liquid so the dip does not get watery. It is a great make-ahead dish that you can keep in the fridge and pop in the oven right before your guests arrive.

  • 8 oz cream cheese 225 g; at room temperature
  • 1/3 cup mayonnaise 80 ml
  • 1/2 cup sour cream 120 ml
  • 1 1/2 cups shredded cheddar cheese 150 g
  • 1/2 tsp mustard 2.5 ml; ideally whole grain
  • 1 tsp lemon juice 5 ml

Method

Instructions
  1. Preheat the oven to 350°F (180°C).
  2. In a bowl, beat the cream cheese with an electric mixer until smooth, then add the mayonnaise, sour cream, shredded cheddar cheese, Worcestershire sauce, seasoning, lemon juice, and mustard, and beat a little more until everything is well incorporated.
  3. Flake the jaiba (crab) meat over the mixture and use a spatula to fold it in gently so you do not break up the pieces of meat too much.
  4. Pour the mixture into an oven-safe dish and bake for 25 minutes or until it is lightly golden and bubbling around the edges.
  5. Sprinkle with chives and serve hot alongside crackers or toast—enjoy!
