Florentine cookies

Florentine cookies are delicate, delicious and very beautiful, they are perfect for when you want to eat something sweet or to give away, and they are also very simple to make.

I prepared them with almonds and walnuts, but you can use the nut you prefer or even add candied fruit. Also as it has no flour they are suitable for celiacs.

Ingredients

  • 1 1/2 cup powdered sugar
  • 2 egg whites at room temperature
  • 4 1/2 oz chopped almonds
  • 4 1/2 oz chopped nuts can use the nut or nuts they want the important thing is that together they add 250 grams
  • 1 teaspoon honey
  • 1 orange its zest
  • 6 oz chopped milk chocolate

Instructions

  1. Preheat the oven to 300ºF

  2. Line the baking trays with butter paper. Reserve.
  3. With the help of a hand whisk in a bowl mix the egg whites with sugar, honey and orange zest (it is just mixing, not beating) until a homogeneous mixture is obtained, add the nuts and mix well.
  4. Put a tablespoon of mixture on the butter paper, spread it forming a circle. Repeat taking care to leave space between the cookies as they will stretch in the oven.
  5. Put in the preheated oven for 15 minutes or until lightly browned. If they were very disassembled after the oven we can shape them with the help of a glass. Let cool COMPLETELY before removing from the paper as they are very fragile.
  6. Melt the chocolate in a water bath and cover one of the sides of the cookie with chocolate, let it harden (in the refrigerator it is faster) and enjoy!
