Chilean alfajores

Ingredients

  • 3 cups all-purpose flour
  • 3.5 oz unsalted butter at room temperature
  • 3 egg yolks
  • 3/4 cup whole milk
  • 2 tablespoons pisco or rhum, cointreaux or any other spirit

Filling>

  • Dulce de leche caramel spread, you can use it alone or mixed

Instructions

  1. Preheat the oven to 392°F (200°C).
  2. In a bowl, mix the flour and butter with your hands until it forms a sandy texture.
  3. Add the egg yolks, milk, and pisco to the flour and butter mixture. Work the dough with your fingers until all the ingredients are well incorporated.
  4. Divide the dough into 4 equal parts and roll out each part on a lightly floured surface until it is as thin as possible.
  5. Cut out circles of the desired size, approximately 3 to 4 inches in diameter.

  6. Place the circles, one by one, on a baking sheet lined with parchment paper. Prick the circles with a fork and bake for 5 to 10 minutes (baking time depends on the thickness of the dough) until cooked but not golden. Remove from the oven and let them cool slightly. Repeat the process until all the circles are baked.
  7. To assemble the alfajores, spread a tablespoon of dulce de leche (or desired amount) onto one of the circles and place another circle on top, pressing lightly with your fingers.
  8. Enjoy your alfajores!
